Schlotzsky’s was started by Don and Dolores Dissman in 1971. They should be credited with doing one thing very well. Not many restaurants could pull off a menu with one sandwich but they found a way. After a trip to the French Quarter in New Orleans, they discovered muffulettas in an Italian grocery store. They brought the idea back to Austin, TX and opened up shop charging $2.95 for their own version.

When the first restaurant opened in Austin in 1971 they only sold one sandwich – “The Original”. They still serve that sandwich today.
The first sandwich, The Original, was based on the Muffuletta sandwich and was the only sandwich invented by Don and Dolores.
In 1981, 10 years after opening the first store, Don and Dolores sold the then 100 locations for $3 million. (source)

Hamburgers and chicken places are everywhere. The American quick service restaurant business is sad with the lack of variety most cities offer when it comes to fast food or fast casual. Schlotzsky’s mixes it up and brings a menu that you can’t find at most other restaurants in this case bringing New Orleans to other parts of the country. For that, they should be applauded.
